What’s it all about? Well you see, I once worked in a canteen cooking dinners for a bunch of people doing printing and office work. It was hard work but fun. I often got to design the menu and choose the music, and stuff with rice was practical and popular. Hence Jamabalaya fits in well with Paella and Biryani, Risotto and Pilaff. It's all the same techique rediscovered in different continents by different cultures using different combinations of ingredients and spices.
